Sugar-free Peppermint Coconut Bark

Looking for a sugar-free treat that is easy, bake-free and delicious? This Sugar-free Peppermint Coconut Bark recipe was born out of my love for mint patties. The twist is- I am sugar-free, so that means saying goodbye to some of the (otherwise) healthy treats I use to enjoy.
I honestly wasn’t sure if I could go completely sugar-free, including fruit, for a candida cleanse. So far, I have managed it by very slowly cutting out the foods which do not serve my health. One thing that helps? Healthy treats in moderation. So, these will get me through until I am able to start the strict part of a candida cleanse. Enjoy!
  • 1 jar coconut butter or coconut manna
  • peppermint oil
  • unsweetened chocolate chips (stevia sweetened), or cacao nibs


1. For a half batch, soften 1/2 jar of coconut butter with the back of a spoon in a small bowl. If you want to make more, use the whole jar.

2. Use 1-2 drops peppermint for every tablespoon of coconut butter you mash. (this really does not have to be exact- I accidentally poured it in once and it was delicious). If the mix is too hard, add some drops of water as needed.

3. Put a small amount of the mixture into each ice cube tray and smash to the bottom, smoothing out the top with your fingers.

4. Pile on your favorite toppings: goji berries, nuts, seeds, cacao nibs or unsweetened dark chocolate chips.

*I used Lily’s baking chips : dark chocolate baking chips, stevia-sweetened with no added sugar, are great for everything from cookies to pancakes to snacking right out of the bag. Certified gluten-free and vegan too!
