It seems that breakfast has been the hardest meal since my diet changed. Usually it is fun with the twins, making pancakes in the morning, gluten-free oatmeal or french toast.
I am much healthier version of myself now that I am grain-free! I wouldn’t go back, but I miss gluten-free bread, oatmeal muffins and fun baked goods I make for everyone else.
Here it goes, a list of grain-free breakfast ideas (leftover dinner ideas:) that will serve mostly as a reference when my brain simply can’t figure it out:
Coconut scrambled eggs with veggies (use a splash of coconut cream from the can)
Organic* turkey bacon crumbles over leftover zucchini noodles
Fried egg over cauliflower rice
Hard boiled eggs with turkey bacon slice

Fruit bowl: mixed fruit with a nut or seed topping and coconut cream
“faux” cereal with coconut milk: frozen mulberries, raw cacao, nut or seed topping
Paleo Wrap breakfast burrito, shredded veggies and beans with Coconut yogurt
Salmon and veggies: steamed or sautéed veggies with leftover salmon.
Frozen Banana slices in coconut milk, sprinkle of cinnamon, nuts and seed topping (shown above) you can top with cacao or dip in some healthychocolate
Sweet potato hash with veggies, sausage or beans and coconut oil
I like to add unsweetened chai with coconut milk, and have small amounts of coffee as a treat!
